Do you ever wonder what to cook or bake on a hot summer’s day?
Sr. Ann-Kathrin has the perfect answer: a deliciously refreshing ice cream cake! She surprised us with it on one of our feast days, and it was the perfect summer treat.
Simply bake two sponge cake layers. Soften the ice cream and whip it with a hand mixer until it’s light and creamy, then spread it over the first layer. If you’d like, add some fresh fruit before placing the second sponge layer on top. Pop the cake into the freezer until firm. Just before serving, slice it and garnish with whipped cream and fresh berries or other fresh fruit.
It’s the perfect dessert for a hot summer day!

Here is the recipe for the sponge cake:

Ingredients
* 6 eggs
* 125 g sugar
* 125 g all-purpose flour

Method:
Beat the eggs and sugar together for several minutes until the mixture becomes pale, thick, and fluffy. Sift in the flour and gently fold it into the mixture, taking care not to deflate the batter.
Spread the sponge batter evenly onto a baking tray lined with parchment paper and bake at 200°C (390°F) for about 10 minutes.
As soon as the sponge comes out of the oven, lightly dust it with sugar while it’s still warm. Carefully transfer it—ideally onto a wire rack—into a large plastic bag. This helps keep the sponge soft and pliable.
